Chocolatatay- Trader Joe's "Reserva Chocolate", Sao Tome Varietal 72% cacao
Sao Tome is located off the West Coast of Africa and the wrapper claims it "has the ideal climate for growing cocoa beans of the highest grade" to deliver "strong, yet balanced chocolate flavor for the serious chocolate lover."
I'm not sure I know anything about chocolate, but this 7 oz bar made in switzerland has this weird flavour. I let the first piece melt in my mouth. It has a melty quality, but in an ever so slightly waxy way and the cocoa has an extremely fine grainy taste as if you can't feel the specks of chocolate, but taste them and imagine them there. It initially tastes sour, then bitter. If you chew it the quality feels better, the bitter sweetness lingers and the aftertaste echos like a sip of hot chocolate. The little squares could be scaled down a bit since this type of chocolate tends to be overpowering.
